Another recipe for a quick home-made bread. It tastes great warm served with olive oil or butter. In fact, I find it quite difficult to make it last long. It just disappears in a few moments!
Makes 1 round loaf
Oil for greasing
225g / 2cups plain flour
225g / 2cups strong wholemeal flour
5ml / 1tsp salt
10ml / 2tsp bicarbonate of soda
10ml / 2tsp cream of tartar
40g butter
5ml / 1 tsp caster sugar
350ml / 1.5 cups buttermilk
Preheat the oven to 400 C / Gas mark 6.
Sift both types of flour and the salt into a large bowl. Add the bicarbonate of soda and cream of tartar. Rub in the butter and stir in the sugar. Pour in buttermilk and mix the ingredients into a soft dough.
Knead the dough for a few minutes on a lightly floured surface and shape it into a round loaf.
Place the dough on an oiled baking sheet and mark a cross using a sharp knife.
Dust the bread lightly with flour and bake the loaf for 35-45 minutes until well risen. The bread should sound hollow when tapped.
Cool slightly on a wire rack.
