This simple yet distinctive recipe is a perfect brunch dish. Good quality ingredients will make a difference. The smell and taste of griddled tomatoes and parmesan drizzled with olive oil and balsamic vinegar always takes me away to sunny Italy. Enjoy the trip!
Serves 4
4 thick slices of soda bread (see the recipe for home-made soda bread here)
30ml / 2 tbsp of extra virgin olive oil
15ml / 1 tbsp balsamic vinegar
6 tomatoes, thickly sliced
1 garlic clove, sliced
Parmesan cheese shavings
Basil leaves to garnish
Salt and freshly ground black pepper
Heat 15ml / 1 tbsp of olive oil on the griddle pan. Add garlic and tomato slices and cook for 5-8 minutes, turning tomatoes once, until they are soft and slightly blackened.
Toast the soda bread slices.
Put the tomatoes on soda bread and drizzle with the remaining olive oil and balsamic vinegar.
Season to taste with salt and pepper and garnish with parmesan cheese shavings and basil leaves.
