Time for a new bread recipe! And here’s another yeast-based bred with a nutty twist. I like the yeast breads as they’re relatively quick and very easy to make. You can then experiment with various additions and various flavours. That’s my plan! I will start with walnut bread.
Makes 1 loaf
450g strong wholemeal flour
100g strong white flour
100g walnut pieces
1 tbsp muscovado sugar
1 tsp salt
7g dried yeast
3tbsp olive oil (or walnut oil if available)
400ml warm water
Put all the dry ingredients into a large bowl and mix together. Pour in the oil and warm water.
Mix together, initially with a spoon, and later with your hands until the mixture combines to make a rough dough ball.
Place the dough onto a lightly floured surface and stretch and knead for 10 mins until smooth and elastic.
Shape into an oval loaf and place on a greased baking tray. Cover with oiled cling film. Leave in a warm place for about 30 minutes, until doubled in size.
In the meantime, preheat the oven to 220 C / gas mark 7.
Remove cling film from bread and reduce the oven temperature to 200 C / gas mark 6.
Bake for 35-40 minutes until the loaf is golden-brown and sounds hollow when tapped.
