Happy New Year! We’ve started the year with a simple, yet delicious brunch.
The whole secret lays in the quality of the ingredients and the simplicity of the recipe. Pan con tomate, bread with tomato is a typical Spanish breakfast in Catalonia, Andalusia and probably the rest of the Spain. With every bite, you can taste the sun, the summer and the holiday. Let it stay with you. Make sure you choose good quality bread, like stone baked baguette or slices of rustic bread, ripen on vine tomatoes and highest quality extra virgin olive oil. This will make a real difference to your breakfast or brunch.

Serves 2
0.5 baguette
1 garlic clove
2 large, very ripe, good quality tomatoes
2 tbsp extra virgin olive oil
Pinch of coarse sea salt
Half the baguette lengthwise and toast or grill the slices.
Rub the bread with a halved garlic clove.
Rub the bread again with a halved tomato, crushing the tomato into the bread. Alternatively, if the tomatoes are not ripe enough, you can grate them on a cheese grater and place them on the bread.
Drizzle with olive oil and sprinkle with salt to taste.
